The first diary, 01.
On Sunday 18th April, 2021
Today, I woke up around 8 a.m. While I was uploading my photos on the pc my mom told me to buy two bottles of vegetable oil.
In the evening, I was an interviewee for my ex-Japanese teachers when I was a university student. I have interviewed by talking in Japanese language for 2 hours. After the long interview, I cooked rice, fried dry beef, gave the cats food, and washed the dishes. Then I was joying Facebook Japanese talking group by using room video chat. Someone that I have been talking to has been a COVID-19 patient since 3 days ago. Now she stays at the field hospital. I'm shocked, and told her to take care of herself.
I hope my family will stay safe and healthy.

1. Not necessary to write 'On.' Only write the date.
2. "...former Japanese teachers..." would sound better here. 'Ex' still makes sense but former is a better word.
3. You can just say "I interviewed..." Writing "have" before interviewed is not necessary here.
4. Because you are talking about something specific, in this case "Japanese language" you would use "the" before. "talking in the Japanese language"
5. I'm not sure if you're using the wrong word here. This is the only sentence I had a little trouble understanding. I think you meant to use the word 'enjoying.' We also need to make sure our verb tense is the same throughout our writing. Everything you wrote before this sentence is in past tense because it already happened. For example:
I interviewed
I cooked
I washed
So here you would want to write "I enjoyed a Facebook Japanese talking group by using room video chat"
Your writing is very good and your grammar is good as well. You have a good vocabulary too. Some common mistakes I see from all Thai people learning English are confusion with when to use 'a' or 'the' and confusion on when to make a word plural. We'll work on those things as well.
You can be confident in your ability to write English though. Any English speaking person would be able to read and understand what you wrote here.

คำถามที่ 1 Ex และ Former ต่างกันยังไง
What about the different of ''Ex'' and ''Former'' if former could make sense better than "Ex". Is it formal or polite than "Ex" , isn't it? Thanks in advance.

It's more formal and could be considered more polite. "Former" is also a more accurate word because it means previous. "Ex" is also kind of a shortcut or abbreviation so it is not as formal. And last, it can also have a negative meaning since usually it's added to something like "ex-girlfriend, ex-boyfriend, ex-husband, ex-wife"
ใช้คำว่า Former จะดูสุภาพกว่า แต่คำว่า Ex จะใช้ในทางที่ลบไปด้วย เช่น ex-boyfriend (แฟนเก่า)
